I just love the very thin French haricots verts (very very thin green beans) and yellow beans, sometimes, for no reason I can understand called wax beans. So to find a big bag of young tender mixed green and yellow beans at the Farmer’s Market was almost too good to be true!
I sliced some up into salad, steamed some with a touch of mint and rosemary. Mmmm. Then the rest were steamed lightly and frozen, as I just couldn’t eat all the veggies I had brought home fast enough.
Recipe: Trim stem ends, wash beans. Place in a microwave safe container and cook under tender but still crisp. (about 1-2 minutes for each serving). Add abotu 1/2 teaspoon per serving of fresh chopped herbs (try mint, rosemary, basil, thyme). Add 1 tablespoon slivered almonds. Toss all together. Spritz lightly with olive oil if desired.
