Cheese, Glorious Cheese!

I stopped at Katie’s Country store today, and now am the proud possessor of 3.85 pounds of Katie’s cheese. It’s really York Valley sharp cheddar, made from raw milk, and it is tangy and delicious…and if you know me personally, you have most certainly had a piece! I usually bring a 40-pound wheel (in a wooden crate) home with me, and freeze it for use all winter. The best ever macaroni & cheese, grilled cheese sandwiches, cheese on toast, mixed into scrambled eggs or omelets, grated over cauliflower or broccoli, sliced plain on crackers…need I go on?cheese

This is the cheese I grew up on, sharp white cheddar cheese locally produced in Pennsylvania. Daily consumption is beneficial for my state of mind and my taste buds. When food has enough flavor, smaller portions are adequate (but note that I am here for only 10 days, and I have almost 4 pounds! MMMMmmmmmm.
